For the Flaky Crust:

Briefly: in a food processor blend 3 cups of all purpose flour, 1 and 1/2 sticks of fridge cold butter and salt to taste. Transfer in a cold bowl and add 1/3 cup of iced water kneading with your hands.

Form a ball, wrap it in plastic film and let rest for 40 minutes in the fridge. After the time has passed, flatten the dough on a cold surface. If you want you can save a small amount of flaky dough for the decorations.

For the Filling:

Wash and peel the apples, cut them in wedges.

With the lemon, prepare both the juice and the grated lemon zest.

In a bowl, mix apples, grated lemon zest, some of the lemon juice to taste, the cinnamon powder, the grated nutmeg, the sugar and the sifted flour.

Mix well with your hands or a spoon, avoiding to break the apple wedges.

Filling the Pie:

Lay about half of the flaky crusty dough, flattened to a 1/6 inch layer, onto a previously greased and floured round cake pan.

Remove the dough in excess (the one that does not fit in the cake pan).

Fill the pie with the previously prepared apple filling. Add on top of the filling some flakes of butter, if desired.

Lay the other half of the flattened flaky dough on top of the apple pie to cover it completely.

With the help of a fork, press the edges of the dough to stick them together and seal the apple filling inside. Remove excess of dough.

At this point you can use the dough leftovers to create your own decorations for the apple pie: flowers, strips, ribbons or the shapes you like.

With a fork or a skewer make some small holes through the top dough to allow the steam to be released from the filling while baking.

Baking the Apple Pie:

Preheat the oven at 400F.

Place the apple pie in the oven for about 20 minutes.

After this time, lower the temperature to 350F and bake for additional 30-40 minutes or until the crust is golden.

Remove from heat and let cool down. Garnish with whipped cream and serve either warm or cold along with a cup of tea or coffee.


Tips:

If the apple pie browns too quickly while baking, place an aluminum foil on top of it. Let then bake the pie until ready. This will help maintaining the top moist enough and avoid undesirable burning.

For additional flavor try adding some raisins, nuts or a hint of liquor to the filling.
