Ingredients:

  • Eggs

    8
  • Mushrooms (sliced)

    10 oz
  • Garlic

    2 cloves
  • Oil

    2 tbsp
  • Salt

    to taste
  • Black Pepper

Cooking Directions:

Wash, clean and slice the mushrooms. Mince the garlic.

Crack the eggs in a large bowl, season with salt and pepper and set aside without beating them.

Heat a non stick frying pan. Add the oil and stir fry the garlic for few seconds.

Add the sliced mushrooms and saute until wilted (3-5 minutes). Simmer to evaporate the excess of water.

Lower the heat and quickly add the eggs.

Cook for few seconds allowing the white to set a little.

With a wooden spatula, scramble now the eggs to form soft curds.

Stirring constantly, cook until the eggs are cooked but not completely set. Leave them moist, since they will keep cooking for some time when removed from the pan.

Remove from the pan and serve with a side of bacon, ham, sausages or hash browns.


Tips:

For moister scrambled eggs, add some milk to the eggs and beat everything together before adding to the pan.
