In a a large pot bring to boil enough water to cook the pasta. When boiling, add salt and the penne pasta. Cook until al dente.
in the meantime, chop the green olives and the garlic cloves.
Saute the anchovy fillet, the olives and the chopped garlic with the extra virgin olive oil in a medium sauce pan.
Add the tomato sauce and let cook for about 10 minutes at low-medium heat stirring occasionally. Reduce the sauce to the desired consistency.
Add the crushed red peppers if desired.
Dress the pasta with the obtained sauce and serve hot. Sprinkle with some chopped Italian parsley if desired.
