Pasta alla Carbonara (Eggs and Bacon Pasta) - Recipe
From a classic of the Italian cuisine, eggs and your favorite choice of bacon in this delicious pasta recipe. Pasta alla Carbonara will become one of your favorite main courses.

Cooking Directions:
While heating enough water to cook the pasta, heat the olive oil in a deep skillet over medium flame. Add the chopped onions and the cubed pancetta and saute' for about 3 minutes, until the bacon is crisp and the fat is rendered.
In a large bowl with a fork beat egg yolks, salt and pepper as desired
When the pasta is ready (al dente) add the drained spaghetti in the bowl and mix to the beated yolk eggs. Add the bacon and onion sauce previously prepared and mix.
Tips:
If you desire a smoother sauce, you can add 1-2 tablespoons whole milk (or heavy whipping cream) to the beated egg yolks. In addition, you can use smoked bacon instead of pancetta, but the resulting taste will be pretty different (try yourself!).
